To clean a rabbit for the table place the rabbit on a table or log. Take your fingers and grasp the skin, pinch it with your fingertips. Pinch the rabbit's fur right in the top middle of the rabbits back.
Now cut the fur that you have pinched. Cut in a direction that is left to right on the rabbit, not front to back. After you have made that cut, put a couple of fingers into the opening. Use both hands. One hand should grab the head side of the cut and the other hand should grab the fur on the tail side.
Now, pull your hands away from each other. The fur of a rabbit is not that strong or well connected to the animal. Almost like the rabbit is wearing a fur suit as a human would. By pulling you should easily begin to separate the fur from the body like taking off a shirt and pants in two clean pieces.
As the shirt and pants reach the feet just cut the feet off thereby removing the hide as well. Or you can simply pull a little harder and the fur will separate at the ankle.
Continue pulling the fur and the tail may come off.
Pull the front fur up and around the neck just to the base of the rabbits head. Cut off the head feet and tail at the base.
Now with your finger, find the bottom of the rib cage. Make a very shallow cut just below the sternum down towards the anus. Be careful to only cut through the thin stomach muscle and not puncture the guts.
Now you simply have to endure a little grossness and remove the guts with your hands. If anything remains attached to the body cavity simply cut it away with a knife to completely clean out the cavity.
The body cavity is separated into two compartments. The rear is filled with intestines and stomach. Be sure to also evacuate the upper cavity which holds the lungs and heart.
Wash the rabbit carcass clean of hair and debris and it is now ready to become rabbit stew or whichever dish you prefer.
The heart, liver, and kidneys can be cleaned by washing, cooked and eaten just like the meat. For better taste remove the fat.
The rabbit can be cooked whole or cut into sections and cooked separately.
